I'm a legitimate oatmeal cookie monster... I only counted, as well as January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of them yet? (? The remaining portion of the cookie dough's sweetness comes in another natural ingredient... Pure maple syrup (like that!) . You desire the kind that comes directly from maple trees, which is usually sold in thin glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

Yields: 15 biscuits

The recognizable cozy spices and plump raisins make these even more irresistible. They will keep for at least one week if kept in an airtight container in the refrigerator--should they last that long!


1 cup (100g) instant oats (fermented if required and quantified like this)

3/4 cup (90g) whole wheat or fermented * flour (quantified like this)

1 1/2 tsp baking powder

1 1/2 tsp ground cinnamon

1/4 tsp salt

2 tablespoons (28g) unsalted butter or coconut oil, melted and cooled slightly

1/4 cup (63g) mashed banana

1 teaspoon vanilla extract

1/2 cup (120mL) pure maple syrup



In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add the flour mixture, stirring just until incorporated.

Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.

Using a spoon and spatula, drop the cookie dough into 15 curved scoops on the sheet, and flatten to the desired depth and width by means 100 Healthy Cookies - Cooking Light of a spatula. Bake in 325°F for 10-12 minutes.

Notes: It's extremely important to measure both the oats and flour correctly employing this technique or even a kitchen scale. (? That's the one I own and adore!) Too much of either would dry out of the biscuits and render them cakey rather than chewy.

Immediate oats are also referred to as quick-cooking or moment oats. They are available in large canisters, just like conservative oats. They are not the ones at the tiny flavored loaf of bread. To create your own, add the same quantity of traditional yogurt into your food processor, and pulse 10-12 times or until the oats are approximately 1/4 into ? of the initial size.

For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tbsp (15g) brown rice , and 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like this one!) Will also work, if measured like this.



In case your pancakes are old, drier, and not so plump or juicy... Add them into a microwave-safe bowl, and pour water at the top until they're totally coated. Seal plastic wrap over the surface, and microwave the bowl on high for 1 minute. If you allow the raisins sit while mixing together the cookie dough, then this small trick hydrates them they're really soft and succulent!
